Lazy(ish) Sushi

So if you know me, you know I really like my sushi.  You may also know I can't afford it as often as I would love to eat it.  I took on the adventure of learning how to do my own sushi, so far so good. 


But of course doing actual sushi does take a lot of time.  Being that I don't get home most nights till after 7 this is just not a reasonable dinner plan!  Plus add to it, some of us (me) just love cream cheese in my rolls while others (not me) don't want cream cheese, thus crating the need for separate rolls to make all happy.  

Well this week I decided yep I want sushi, but crap! I don't have seaweed wrappers!  So I created my own version of lazy make it your own way, buffet style sushi minus seaweed wrappers. 
Turned out pretty good. 

So first...  get your meat choices and veggies ready to go.  I chopped everything up kinda small for this since this is not traditional sushi rolls. 


Here I have imitation crab, some smoked salmon and "spicy" crab mixture of mayo and Asian chili sauce which we call "cock sauce." 


Next I have all my veggies chopped and ready to go, carrot, cucumber, avocado, and jalapeno. 


By the way, during all this prep your sushi rice has been cooking.  Now I am not a sushi chef so I just dump in a bunch of rice wine vinegar and say, "yep, that's good." 

So now the kinda different part.  Instead of getting out the sushi mat, the wrappers and having to spread the rice bl bla bla...  I just made a pile on a plate, the spread it out using my paddle and fingers.  A clue the rice is HOT if you are using your fingers and it is STICKY.  get your rice paddle and fingers wet first to help the sticky, your on your own for the hot.   Once spread into "sushi lines" I put a little indentation through the middle to hold the sushi yummies. 


Finally the fun part add meats, toppings and enjoy!
