The foodie weekend.

This is going to be a long one I plan to fit the whole weekend into one entry.  Saturday was adventure day with grapefruit bars and Sunday was 7 mile walk with the dogs and crazy cooking day!

So Saturday morning was adventure day as stated.  I had an idea for "lemon bar" like grapefruit bars. I attempted to make said grapefruit bars, which sadly did not turn out to my liking. Or well, much of anyone else's either.


The bars were too sweet and they did not set up right.  Next attempt I will use less sugar, less grapefruit juice and add lemon.  Not going to list that recipe, since it is still a work in progress, maybe someday though... 


What did turn out for me Saturday, was my pickled carrots and radishes.  YUM!  they make a great sandwich topper cut with a little mayo.  I use the recipe from http://whiteonricecouple.com.  The difference is  that I do can mine, leaving 1/2 inch head space and process in a water bath for 15 minutes.  Also if Daikon radishes are hard to find, I know by me they are for some reason, black radishes work great in this recipe. 



Sunday was a great day, got to have more crazy food adventures and a nice long 7 mile walk with J at the Dunes with 3 miles along the beach with the pups.  
Sunday got started off on the right foot with some pancakes! Weekends are usually pancake day at our house, and lately I have been experimenting with the flax seed pancakes.  They need more work, lots more work.  This weekend I gave in an just used some egg substitute.  But no regular pancakes for me if I can help it!  I split my batter and folded in a few spoonfuls of my homemade apple butter.  YUM #1.  Since I had an open thing of chocolate chips and a thing of flaked coconut sitting around, with the other half of my batter I made some seriously good chocolate chip coconut pancakes :)  YUM #2.  Sorry, too busy eating to take a pictures! 

Afterwards we did the 7 mile walk thing.  It was such a warm day.  Cailin and Opus the two little ones (who behave off leash) got to run and play in Lake Michigan while we walked the beach front.  


Cailin my smallest (JRT) cracks me up.  If I pick up her leash she is at the end of it choking herself, if I drop it and she drags her leash, she sticks right by my heal.  Goofy dog!  

Finally we made it back home for cookout time!  J really enjoys grilling out, and I really enjoy throwing crazy things on the grill.  Last years big thing was green tomatoes, BTW wayyyy better grilled plain then fried. 
Sundays dinner was a crazy collection of our favorite kitchen sink burgers.  I think burgers are great with lots of stuff crammed in them. 


Lets see, Sunday's burgers had Asian chili sauce, mushrooms, green peppers, sweet peppers, onion, garlic, flax seed, celery, and a touch of egg substitute to keep them together.  With two of the burgers I added a little imitation crab too.  Thus I call them kitchen sink burgers :) 


Had to try the grilled avocado I saw on Pinterest.  I rubbed a little lemon on the avocado halves before grilling.  Ended up tasting like very creamy warm avocado.  Basically nothing special. 


Eveerything is ready to go! 




I didn't do a picture, but I did try grilling a pickle.  I figured "hey those deep fried pickles are huge right now!"   So I grilled a pickle slice and it wasn't bad at all, tasted like a crisper hot pickle.  


All in all, it was a great weekend to get out, cook some crazy things and enjoy time with J and the dogs!
